GrandKid Friendly Recipes for Camping

Every summer we take grandkids on a trip somewhere and more often then not we camp along the way.   When we are camped for a few days we try to make a few kid friendly recipes that they can help out with and love to eat.  We normally don’t carry our dutch oven in the van, those recipes are for when we head to the Current River and have the truck too.

Grilled Nachos

5 cups totilla chips
1 15oz can black beans, drained and rinsed
1 4.5 oz can chopped green chiles, drained
2 teaspoons of taco seasoning mix (from 1 oz package)
2 tomatoes
2 medium green onions, sliced
2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)

Heat grill.
Spray 12 x 18 foil pan with cooking spray.
Spread Tortilla chips in pan.
In medium bowl mix beans, chiles and taco seasoning mix; spoon evenly over totilla chips. Toy with tomatoes and onions.  Sprinklet with cheese.  Cover pan with foil.
Place foil pan on grill over medium heat.
Cover Grill.
Cook 8 to 10 minutes or until cheese is melted.

Tips:
Foil pans can bend or buckle when you lift them.  Slide the pan onto a cutting board.
Top nachos with sour cream, cilantro,  sliced jalapeño peppers or diced avocado.


Eclairs
Kids love cooking these while camping!  They are not healthy but fun!   You will need a 5/8″ wooden dowel to make these.

INGREDIENTS:
Refrigerated crescent rolls
Snack pack pudding (vanilla or chocolate)
Chocolate frosting
Spray whip cream
5/8″ wooden dowels

DIRECTIONS:
1. Take wooden dowel and coat cooking end with oil.

2.  Wrap crescent roll around top and about 4″ down dowel. Make sure it’s not too thick and doesn’t have any holes.

3.)  Cook over hot coals until golden brown, not doughy.

4.) Remove from dowel and put your favorite flavor of pudding inside.

5.) Frost top with chocolate frosting.

6.) Spray with whip cream.


DUTCH OVEN RECIPES

DUTCH OVEN PIZZAS

1 Package active dry yeast (1 Tbs)
1 cup warm water
1 teaspoon salt
1 teaspoon oil
2 1/2 cups flour
Cheese
Pizza Toppings

Mix all together ingredients together and spray the cold dutch oven with pam, then mash the dough in the bottom. Add the toppings and cheese and cook with 12 coals on the bottom, and 15 on the top for about 15 minutes.
Makes 2 (12 inch) pizzas.


CARMEL APPLE STICKY BUNS

3 pkgs. refrigerated biscuits
1 cube melted butter
1 cup sugar
1 TB cinnamon
1 1/2 cup brown sugar
1 pint whipping cream
4 Granny Smith apples (peeled, cored, and sliced)

Mix sugar and cinnamon. Dip biscuits into melted butter then cover with cinnamon and sugar.

Place biscuits in dutch oven as close as possible. Place sliced apples around outside of dutch oven and in between biscuits.

Sprinkle brown sugar over biscuits and apples. Pour whipping cream over brown sugar.

Bake in dutch oven for about 30 minutes. Check for golden brown biscuits.

**Options- top with 1 cup chopped nuts and/or vanilla ice cream or cool whip.
